How would I fix this sad meal?
I asked myself as I sliced through the lifeless vegetarian option at last week’s design conference. There was nothing wrong with the ingredients or the preparation. The problem was the dejected dressing that sneakily denied this meal fame, fortune, and opportunity.
I was essentially drizzling disappointment over this innocent pile of dead vegetables.
Slay with a smokin’ sauce.
Basic ingredients do not require fancy preparation to taste good. They just need interesting best friends. Once again, another fabulous life lesson from vegetables.
This week, I’m sharing a classic roasted vegetable + grain bowl with a stunner of beet hummus. Double the goods to whip up bowls all week long, and triple the beet hummus because you’ll want it on everything— sandwiches, salads, maybe even your love life. I’m telling you, sauce fixes a lot of things.

Beet Hummus Bowl
Serves: 4
The beet hummus is a straight smoke show. Words alone cannot capture the vibrant magenta and bodacious flavor. While beets dance around in the spotlight, don’t forget they would be nothing without the supporting roles of fresh lemon juice and herby dill to balance the earthiness and elicit a “zomg!”. You can cook the beet yourself via roasting or boiling (Google that one) or purchase it in the refrigerated section of the grocery store. This recipe makes a good amount to bedazzle charcuterie boards all week.
As for this bowl, I’m suggesting cauliflower and Brussels sprouts as the main players, however, consider them interchangeable with almost any root and or cruciferous vegetable you have on hand.

Yum! Your beet hummus sounds so good! Also the art made me laugh! I love the metaphor of phone as “pacifier” and appreciated the snacks as a person without children who always carries snacks.
